At 26 years old, the 1990 Cecchi Spargolo  Capitolare di Cardisco Tuscan wine scored 18+ points on the 20-point Dionysian scale. It cost under $24 back then and is at maximum peak.  There were 20,022 bottles ( 1,668 cases) made of this vintage ,and Dionysian Gary Pavlis and I savored it with a basic Pizza and a fruit and nut salad.

This Sangiovese-based Tuscan wine was the high light of the meal. Soft as silk after decanting.

 

Dr. Pavlis said, “There’s not enough “o’s” in smooth for this wine.” Cherry, tobacco, and spice all show on the nose, and its medium weight and long aftertaste made it an excellent food wine. I think Spargolo is ideal at 10 to 15 years old but they’re enjoyable even younger.  In vino veritas.
