
Butterfly pasta and asparagus married with the pear and mineral notes in the very mature Roussanne wine.
The Rhone grape, Roussanne, should be drunk within four to eight years. However, the 2003 Cooper Vineyards Roussanne from the Cooper Vineyard in Amador County, California, with 13.8% alcohol developed into an interesting food wine. It cost $17 when Dionysian Maynard Johnston and I visited on February 9, in 2016. It scored 15+ Dionysian points out of 20.
Of course it light yellow color had darkened to a deep amber and the upfront fruit faded into a complex sets of aromas helping it to pair with vegetables.
The 12-year-old white was one of my on-going experiments with agin wines.
