Never keep Sauvignon Blancs more than five to seven years; even better, drink them when you get them. However, the 1993 Silverado Sauvignon Blanc did not turn to vinegar. It had 12% alcohol and was delightful when young. It scored just 13 Dionysian points because it had just a bit too much sherry aroma.

It was about $6 back then and was a nice food wine. Last night, it was just a study. All red wines lose their color, while white wines get darker. I have some Sauternes that is brown, but delicious. Color tells you how old it might be, but not how interesting it can taste. In vino veritas.

Only minuscule hints of grapefruit remained. Of course it had darkened like all old white wines do.

I many times serve an old white wine along side a younger red and study the contrast. With wine,you can never know it all.
