Vin Santo, the Holy or Saintly wine, is made for sipping with biscotti  after dinner. The 2004 Felsina Vin Santo Chianti Classico was 15.5% alcohol and the 375 ml bottle was just enough. This charming dessert wine scored a 17 on the Dionysian 20-point scale and just an ounce of this wine per person was enough when sipped slowly and savored.

Its hazelnut sweetness lingered cleanly after the caramel-like aromas filled the glass, your nose and even the room. Its golden-coppery color reflected peach and pineapple and there was also a spicy chocolate scent that carried all the way to the back of the mouth.  It was enjoyable.

Although expensive, $50 for this one, Vin Santo is an ideal dessert wine. This example comes from Siena in Tuscany. Enjoy it prior to coffee, which should always be served after dessert, not with it. In vino veritas.
