Louis Latour’s 2007 Burgundy from Aloxe-Corton Les Chaillots at eight years old is just starting to open up and will start to peak in three more years.  I love wines like this at 15 or more years old. It’s 13.5% alcohol is fine. It cost about $30 and scored 16+ points on the Dionysian scale of a possible perfect 20.

No place beats France’s Burgundy region for Pinot Noir. It is silky smooth, medium ruby (not inky-garnet like new world samples that are many times laced with Syrah to darken it) and filled with ripe cherry and vanilla notes. It’s not overpowered by oak.

The village of Aloxe-Corton has “Le Corton” as its single Grand Cru ,and it has two Premiers Crus: Laes Challlots ( our sample) and Les Meix.

Pinot Noir goes best with duck breast, salmon and turkey. We drank it with some left-over turkey and it turned the meal into a special event.

This Burgundy need almost an hour of air to fully open. I hope to review it again in eight or ten years with the same food. In vino veritas.
