The French Champagne House, Gruet, makes this American Sparkling Wine  from grapes grown in New Mexico, not California. The Gruet Blanc de Noirs  has 12.% alcohol and scored 16 points on the Dionysian scale of 20 possible points.

Made with all red grapes, it has a creamy toasty flavor with a slight hint of bing cherry ( from the Pinot Noir) on its nose. Perfect as an aperitif or with food.  It works well as the main food-wine, and was served with a Jersey pea and sausage pasta dish sided with fresh salad. heavy with onions.  In vino veritas.

Sparkling wine easily pairs with simple dishes. The sausage’s rich flavor was cleared from the palate with the bubbles making each new forkful delightful, just like the first one was.
