This CAVA’s 11.5% alcohol is perfect. The 2012 Dionysus Nature Brut Reserva has no sugars added to it and is clean and bone dry. It scores an excellent 16+ on the 20-point Dionysian scale. (Photo taken at the Fenavin Spanish Wine Fair in La Mancha)
Produced by Canals Munne (having nothing to do with the New Jersey chain of wine stores) it is made from the three traditional Spanish CAVA grapes and they are noted as Organicity grown: Xarello, Macabeo and Parellada are the grapes. Recent change in the DO Spanish wine laws also permit Chardonnay and both styles are enjoyable.
Costing under $14, this is an ideal reception wine and it paired well with veggies, soft cheeses and Spanish ham. Try a CAVA over the weekend.
Remember, you can get six bottles of CAVA for just on bottle of most Champagnes. In vino veritas.
