The 1990 Laboure-Roi Chablis Primeiru Cru “Fourchaume” has 13% alcohol and cost nearly 16 dollars 25 years ago. It scored 18 points, at 25 years old, on the Dionysian Scale of a possible perfect 20.

There are only 30 Premier Cru Vineyards in Chablis and I think Fourchaume is the best of this level. There are only seven Grand Cru Vineyards , but the Premiers are your Best Buys1
Chablis does indeed age and in doing so, it develops a load of complex mineral and white flower aromas and flavors along with pear and melon. I’ve had older Chablis (30 years) with Dionysian Gary Pavlis and his famous clams (Little Necks) steamed in white wine. This one had similar aromas and taste. Age some for yourself.
