Washington State makes some excellent honey wines called MEAD.  The Sky River Mead is 12.5% alcohol, has a golden hue and a gentle touch of sweetness that lingers forever. It scores an excellent 17 on the Dionysian 20-Point scale.

Mead was the drink of poets,  kings , and gods in ancient days. It has a honey nose, of course, and sweet pear flavors, It’s ideal for a frosty evening or served at sunset on a warm summer’s day. In both cases, it should be chilled. This example was warmed until it was a brownish caramel before fermenting.

Mead also makes an excellent reception wine. In vino veritas.
