Simple Spanish almonds and fresh strawberries paired well  the non-vintage Vallformosa Brut Rosado CAVA as a pre-dinner reception drink. This sparkling wine was opened with a saber. (check photo with the cork still in the glass neck and note the top  of the bottle) It 17+ points on the Dionysian scale of 20. Exceptional! It is 90% Garnacha and 10% Monastrell with 12% alcohol. The blend of red grapes explains the darker than usual Rose’ color; it’s more cherry than salmon because of the Monastrell.

The Rose’ was made in the Traditional Method”, has 11.5 g/l of residual sugar and a pH of 3.04. These are ideal numbers for an easy drinking sparkling wine. It rested for 12 months on the lees and is a wine filled with strawberry and raspberry aromas. This is the perfect summer reception wine and can be used with most opening courses throughout the year.

Keep a 6-bottle case in your cellar at all times.  Many Dionysian Members consider Vallformosa one of the best sparkling wines made anywhere. In vino veritas.
